Recently, while I was reflecting on the many great aspects of being a chef I recalled a conversation with one of my colleagues regarding a chefs Toque for the lay reader, a chef toque hat, that 10.5 tall, stiff white cylinder that has pleats all the way around it. Those pleats represent the 101 ways a chef is able to prepare an egg.
While I will not cover 101 ways to fry, the following two recipes are a couple of my favorites of the countless ways you can fry.

Monte Cristo Sandwich ( Inspired by the Charlie Mitchel's eatery in Tulsa
Works great for Brunch!
Serves 6
You will want to have on hand:
40 Tooth Picks (halved skewers)
30 slices of thinly sliced Ham
30 slices Turkey
15 slices Swiss cheese
15 slices Gruyere cheese
1 Cup Red Currant Preserves or other
Crust-less White Bread 30 slices
10 eggs Beaten with
2 tsp Nut Meg
2 tsp White Pepper
2 tsp Pobalno Chile DUST
10 Egg Whites
1/2 Cup Water
1 Cup Gunnies
1.8 cup King Author Flour
6 tsp Laura Brodys Bread Enhancer
2 tsp Baking Soda
Garnish Fresh Berries and Powdered Sugar
This is a revisited recipe for me as its hard to get it any better! Take your crust-less slices of white bread and cut diagonally. In stacks of three, layer your ham and turkey and selected cheese alternately between layers of meat with red current preserves. Slice just shy of your diagonal bread slices. Cover a sheet pan with plastic. Brush your first layer of sliced bread with egg mixture. Continue with combined meat and one diagonal slice of saturated bread in the middle of your two meat combos. Apply top and pierce with two skewers, brush egg wash, cover and chill or freeze.
Presentation: Begin by bringing your grease temperature to 375. For your beer batter, begin by beating the egg whites stiff and put aside. Combine flour and water, mix well and add by 1/2 cup intervals, beer, then add enhancer followed by soda. Let this sit for a few minutes while making adjustments to consistency. You are looking for a thick batter. Fold in very stiff Egg whites by half. Dip your sandwiches and repeat once more before deep fat frying. A deep golden brown should be acquired between five and six minutes. Remove and rest on a bed of dry paper towels. Serve by dusting with powered sugar and fresh preserves.

The man behind Emco Tech – the Michael Moon Story
This story begins like so many others who drink this water – with fantastic results.
Michael Moon was a wealthy man before he was introduced to magic of the water created by ionization technology. He had already made a fortune in the construction industry as a steel and concrete contractor who built high-rise towers in downtown Seoul . In addition, he owned a number of other companies across a variety of industries. As in all business timing is crucial to success, and he seemed to always be in the right place at the right time.
By the early 1980's the demands of being a successful businessman and entrepreneur had caused his health to decline. He had adult onset diabetes, hypertension and struggled with his weight. Out of concern, a good friend introduced Michael to alkaline water.
Within one year Michael had dropped about 80lbs, stabilized his blood sugar and gotten off the medication for his high blood pressure. He was stunned and needless to say quite excited by the results.
Being the savvy businessman with a knack for good timing, he looked at the fledgling market for ionization technology. He immediately saw the emerging movement of the technology from the commercial and medical applications of the low pH water toward drinking high pH or alkaline water for health benefits. At this time the market was almost entirely controlled by the Japanese. All the best scientists and engineers who were advancing the new ionization technology were Japanese. In addition most of the companies manufacturing ionization technology were Japanese.
Being Korean, Michael analyzed the newer and developing Korean marketplace. At this time there were a few small Korean companies who were beginning to manufacture ionization technology. In his search he found Dong-Yang Science, a medical equipment manufacturing company. Ionization had become licensed in Japan and later in Korea as a medical device and was being used in hospitals for wound and burn care and for its disinfecting properties. Dong Yang Science as a medical equipment manufacturer was making ionization technology for medical applications. While the medical application business opportunity was good, Michael realized the staggering potential of the drinking water applications. He correctly determined that drinking water use of the technology would soon outpace and bury the medical equipment opportunity.
He went to Dong Yang Science with a plan. His plan offered Dong Yang Science a partnership investment of one half a billion Korean wan, approximately $10 million US dollars. That is 1982 dollars – today's equivalent investment would total approximately $30 million. The plan offered Dong Yang Science the capital to fund the construction of a brand new state of the art manufacturing facility in Korea . This facility would go on to achieve ISO 9001 and 14001 certification, and become the largest ionizer assembly plant in the world capable of over 100,000 units per month.
The balance of the capital would be spent to fund the construction of another state of the art facility in Japan – where all the best ionization talent was. He would then hire some of the best and brightest ionization scientists and engineers to staff his new R&D operation. This Japanese facility was designed from the onset to become THE leading research and development force in the industry.
Advanced Electrode Testing
The Japanese facility would also become the manufacturing arm for the R&D, making the worlds most advanced electrode and membrane technology components – the crucial component in an ionizer. In exchange for these investments Michael's new company Emco Tech* was granted the world-wide marketing rights for the ionizer brand.
Today, sales of Emco Tech ionizers total approximately 50,000 units per month, making them the world's largest manufacturer. I heard you were wondering about comparing our water to Penta water. At our booth we put up a display board. At the top is the quote, "Over-acidification of the body is the root cause of all disease." "What is the pH of the water you drink?"
We start people out drinking level 1 on the Athena, just slightly alkaline or pH 7.5 to 8. We have them progress up the levels to pH 9.5 slow enough so healing is gentle. Sometimes people drinking 9.5 will go up to pH 10 just for a couple weeks or a month for some extra cleansing every 6 months or so.
I'm attaching a photo we took of the pH of the Penta Water. In case you can't read the numbers (though it is the same pH chart that comes with the Athena): The purples are 10 and 9, Blue is 8, Green is 7 or neutral, 6 is lime green, 5 is yellow, and 4 is orange. The scale is logarithmic like the earthquake scale. Therefore, water at pH 7 is actually 10 times more acidic than pH 8. Water pH of 6 is 100 times more acidic than pH 8. pH 5 is 1000 times more acidic.
The Penta water test is schocking. All these bottles were brand new off the local grocery store shelf, opened while a group watched, tested, and photographed. I looked up the published value for Penta and they claim only slightly acidic. What happens to slightly acidic water as it sits in a bottle for a time? (It's not just Penta. We've seen other bottled waters test more acidic than the company claims. It's easy to do your own test with the reagent drops that come with the Athena or order more from your website.)
Even if it is only slightly acidic, we wouldn't drink it.
Even if it is good water in plastic, we try not to drink from plastic.
"In some cases, it appears bottled water is no less polluted than tap water and, at 1,900 times the cost, consumers should expect better," said Jane Houlihan, an environmental engineer who co-authored the study.
I looked up the results of a company that tested the ORP of lots of bottled waters (Oxidzing or Reducing Potential -see coming articles to understand that you want -ORP to reduce oxidation or aging of the body). Penta came out higher +ORP than most tap and bottled waters. (This is going in the wrong direction. Oxidation is the apple turning brown or the aging of our cells.)
You can get an ORP meter online for about $100. These actually measure the charge in millivolts on the water or OH- ions if it is -ORP.
All these OH- ions donate Oxygen making the water from our ionizers Oxygenating to our bodies. This is how I think of it, but read the articles for a more scientific explanation. I do know we have sensitive people who can tell what the water is doing, and even some who aren't as sensitive, notice increased mental acuity which we think is more oxygen getting to the brain.
You can't bottle -ORP. It isn't stable. When we offer people a 2 week free trial, we ask them to commit to coming at least every other day with glass so they get the benefit of the -ORP as well as the alkalinity, structure, and micro-clustering. The -ORP lasts about 2 days in glass though dissipating all the time. It only lasts about a day in plastic and hours in metal. We've had a number of people notice how much better they like it fresh.
Many companies are talking about "Structured" water. We've even heard of a company selling a machine for a thousand dollars to structure the water into a perfect hexagonal structure - without any proof that the water is structured. Dr Emoto grew a beautiful crystal from the water of one of our Jupiter machines. (The Athena and Delphi are the top of the Jupiter line of water filters made by Emco Tech.) To our knowledge, our water filters are the only ones Dr Emoto has endorsed in this way. Another important quality of the water from our ionizers is the micro-clustering. Normally the water from tap and bottled sources has the water molecules clustering in groups of 11-16 molecules per cluster. The water from our units clusters in 5-8 molecules per cluster helping to make this water up to 6 times more hydrating than tap or bottled water.
